March Menus

Food in season in March:

Bananas, beetroot, carrots, kiwi fruit, lemons, oranges, passion fruit, pineapple, pomegranate, rocket, spinach.

Bananas

Why are they good for you? Bananas contain potassium, vitamin B6, folic acids and vitamins A and C. Bananas are a great source of energy as they contains slow release sugars.

Serving suggestions: Bananas are a quick healthy snack on their own, or they can be chopped up and added to yoghurt, cereal or pancakes.

To make Banana Bread line a medium sized loaf tin and pre-heat your oven to 170C/ Gas Mark 4. Cream 75g of margarine and 150g of sugar together. Gradually add 2 beaten eggs and beat well. Sieve 180g of self-raising flour and stir into the mixture. Add 500g of mashed bananas and pour into the loaf tin. Bake for approximately 45 minutes.

Carrots

Why are they good for you? Carrots contain beta-carotene, which converts in the body into vitamin A, and also contains vitamin B and C.

Serving suggestions: Carrots may not seem like a typical breakfast item, but carrots can be eaten raw, as crudités, cooked in cakes and muffins, or even served as carrot juice. You can add carrots to smoothies, such as carrot and orange, or carrot and tomato juice.

Oranges

Why are they good for you? Oranges are a good source of vitamin C.

Serving suggestions: Like bananas, oranges are a naturally wrapped, perfect snack that can be eaten on their own, or with yoghurt or cereal. Orange juice is very refreshing – especially when freshly squeezed. To make your orange juice extra special and sparkling, why not mix freshly squeezed juice with lemonade and a sprig of mint?
